Eat | Sweet Potato Pizza Base Recipe






I have seen a lot of these recipes floating around and wanted to give it a go to see if this actually tasted like pizza. So after my first attempt I decided that it tasted just as good pizza! and I love pizza. like love it. Probably my favourite food ever. Served with a side salad and some corn on the cob you have a healthy take away style dinner that you can't and wont be guilty after.


RECIPE:

 Ingredients - (This will make a personal pizza with 4 slices, enough for two! )

  • 3  medium cooked sweet potatos ( I microwaved mine for about 9 minutes)
  • 3/4 of a mug of plain flour
  • 1 large egg
  • salt and pepper for seasoning with some mixed herbs or whatever you feel like
  • pizza sauce
  • cheese (I used a mix of white cheddar & mozzarella )
  • Toppings - I used chicken, sweetcorn, red onion and green pesto
Instructions:
1. Preheat oven to 180 degrees on fan, 200 on a non fan oven. After cooking your  potatoes in their skins, peel and mash in a big bowl. Leave cool for a few minutes mix in a big bowl with flour and egg. Stir, then add your salt, pepper and herbs. The texture of the mixture should be dough like but still sticky (they are potatoes after all) If you find it's too sticky add in another bit of flower.  
2. Flour your tray or lay down a sheet of baking paper and flour. Spoon your mixture onto the tray.Flour your hands well and start spreading the mixture across your tin. Keep flouring your hands until you have you desired thickness.The thinner it is the more pizza-esque it will be as there wont be too much sweet potato. Mine was about 2cm thick. Don't forget to fold back the edges form a crust.
3. Throw your base in the oven for about 15-20 mins. The base should brown slightly and harden. Make sure the center is hard enough for toppings. Before you do add your toppings, loosen the base from the tray with a knife or spatula. It will stick if you don't! Throw on your pizza sauce and toppings and pop back into the oven.
4. At this point I switched on the grill so the toppings cooked faster. (mainly because I was starving) This also makes everything a little crispier and delicious. I leave it there for 5-10 minutes and boom your done. Serve up and dig in.This genuinely is absolutely deeeeeeeelicious and it well worth a go.
